Why is Water Considered the Universal Solvent?
Water is often referred to as the universal solvent because of its unique chemical structure and properties, which allow it to dissolve a wider variety of substances than any other liquid.
The Role of Polarity
The secret behind water's dissolving power lies in its molecular structure ($H_2O$). A water molecule consists of two hydrogen atoms bonded to one oxygen atom. Oxygen has a higher electronegativity than hydrogen, meaning it attracts the shared electrons more strongly.
This creates a polar molecule:
- The oxygen side carries a slight negative charge.
- The hydrogen side carries a slight positive charge.
How Water Dissolves Substances
When a polar or ionic substance (like table salt, or sodium chloride) is placed in water, the positive ends of the water molecules attract the negative chloride ions, and the negative ends attract the positive sodium ions.
Water molecules surround these ions, pulling them apart and dispersing them evenly throughout the liquid. This process is known as hydration or dissolution.
Limitations: What Water Cannot Dissolve
While water dissolves polar molecules and ionic compounds exceptionally well, it cannot dissolve non-polar substances, such as oils, fats, and waxes. These non-polar molecules do not have charged regions to attract water molecules, which is why oil and water do not mix.
